THE SECRETS OF DISTILLING SPIRITS

Distillation, a contemporary alchemy, shapes the unique character of each spirit.

Let's explore the process in depth, revealing how each type of brew, from whiskey to gin, is born with specific flavor notes, the true imprints of its journey through the still.

THE FUNDAMENTALS OF DISTILLATION

Distillation begins with fermentation, where the natural sugars of the ingredients, whether grains, fruits, or plants, are transformed into alcohol. The result, called “wash” or “wort”, is then sent to the still to begin the distillation process.

THE TWO-STEP PROCESS

WHISKEY

First distillation: The wash is heated in the still, producing alcoholic vapors. The first distillation gives rise to “low wine”, rich in aromas of cereals and yeast.

Second distillation: The low wine is subjected to a second distillation, refining the alcohol concentration. Oak barrels, used for aging, provide woody notes and complex flavors, such as caramel and vanilla.

THE GIN

First distillation: The grain must is distilled with juniper berries, giving the “low wine” its first notes of juniper.

Second distillation: Botanical ingredients, such as coriander, lemon zest, or cardamom, are added to create the aromatic variety characteristic of gin.

VODKA

First distillation: The must undergoes repeated distillation to remove impurities. Some distillers choose a multiple approach to achieve maximum neutrality.

Second distillation: Neutrality is maintained or elements of distinctive character from the raw materials are preserved, depending on the desired style.

DISTILLATES AND THEIR FLAVOR NOTES

WHISKEY

Distillers choose specific stills, such as column stills or pot stills, influencing the richness of the aromas.

The choice of barrels for aging, whether American or European oak, shapes the final notes of the whiskey.

THE GIN

The personality of the gin depends on the botanical ingredients used. Subtle variations can be achieved by adjusting proportions and experimenting with specific herbs and spices.

VODKA

Some distillers prefer specific filtration methods, such as repeated distillation or the use of activated carbon, to achieve maximum purity.

Others opt for gentler distillations to preserve subtle grain or fruit notes.

TO CONCLUDE

Distillation is a symphony of art and science, where each distiller composes a unique work.

By unlocking the mysteries of this process, we refine our understanding of the subtleties behind each sip, paying tribute to the expertise and creativity that distinguishes each spirit.

Each note of flavor thus becomes a sensory journey, reminding us that distillation is much more than a transformation.

It's a delicate alchemy that transforms raw ingredients into liquid treasures, and each sip is a celebration of this rich heritage.
